Cream Cheese Layer

  • 3/4 cup (85 g) confectioners’ sugar
  • 1 tsp. vanilla extract
  • 1 1/2 cups heavy cream

Strawberry Gelatin Layer

  • 5 tsp. strawberry gelatin powder (such as strawberry Jell-O)
  • Remaining cream cheese mixture from step 4

Whipped Cream Topping

  • 3/4 cup heavy cream
  • 1 tbsp. confectioners’ sugar
  • 1/2 tsp. vanilla extract
  • 2/3 cup fresh strawberries, hulled and finely chopped
  • 3 finely chopped golden Oreos for garnish

Instructions

  1. Prepare the Crust: In a large bowl, whisk together the finely crushed golden Oreos and kosher salt. Pour in the melted, cooled butter and stir until well combined. Press this mixture firmly into the bottom of an 8″ x 8″ glass baking dish to form an even crust. Place the dish in the refrigerator to chill while preparing the next layers.
  2. Make the Cream Cheese Mixture: In another large bowl, using a handheld mixer on medium-high speed, beat the softened cream cheese, 3/4 cup confectioners’ sugar, and 1 tsp vanilla extract together until smooth and creamy, about 1 to 2 minutes. Gradually add 1 1/2 cups of heavy cream and continue to beat until the mixture is light and fluffy, approximately 2 to 3 minutes more.
  3. Layer the Cream Cheese Base: Spread half of the cream cheese mixture (approximately 380 grams) evenly over the chilled crust. Use a mini offset spatula or the back of a flat rubber spatula to smooth the top. Set aside.
  4. Add the Strawberry Gelatin Layer: To the remaining cream cheese mixture, add the strawberry gelatin powder. Beat on medium-high speed until fully combined and the color is uniform, about 1 minute. Spread this strawberry gelatin layer evenly over the cream cheese base. Smooth the surface carefully. Refrigerate the layered dessert for at least 2 hours, or up to 1 day, allowing it to set and become firm.
  5. Prepare the Whipped Cream Topping: When ready to serve, in a medium bowl, use a handheld mixer on medium-high speed to beat the remaining 3/4 cup heavy cream, 1 tbsp confectioners’ sugar, and 1/2 tsp vanilla extract until stiff peaks form. This should take about 3 to 4 minutes.
  6. Assemble and Garnish: Spread the freshly whipped cream over the set strawberry gelatin layer evenly. Finally, sprinkle the top generously with the finely chopped fresh strawberries and the reserved 3 chopped golden Oreos for a decorative and flavorful finish. Serve chilled and enjoy!
