Meat and Aromatics

- 1 lb. ground beef
- 1 tsp. kosher salt
- 6 garlic cloves, finely chopped

- 12 oz. no-boil lasagna noodles, broken into 2” to 3″ pieces
- 3 cups pre-shredded mozzarella cheese, divided
- 3/4 cup finely grated Parmesan cheese, divided
- 15 oz. whole-milk ricotta cheese
- Preheat and Brown Beef: Arrange a rack in the center of your oven and preheat to 375°F (190°C). In a large, high-sided skillet over medium-high heat, warm the olive oil. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 7-9 minutes. Season with 1 teaspoon of kosher salt.
- Add Aromatics and Basil: Stir in the finely chopped garlic and cook for about 1 minute until fragrant. Add the chopped fresh basil and stir to combine well with the beef mixture.
- Incorporate Sauce and Butter: Pour in the marinara sauce carefully to avoid splatters. Stir in the unsalted butter until melted and fully incorporated. Taste and adjust seasoning with additional salt if needed. Bring the sauce to a gentle simmer.
- Add Pasta and Initial Cheese: Add the broken no-boil lasagna noodles along with 1 cup of mozzarella cheese and 1/4 cup of Parmesan cheese to the sauce. Stir continuously for about 2 minutes, until the sauce is smooth and the noodles have started softening. Then remove the skillet from heat.
- Fold in Ricotta Mixture: In a small bowl, combine the ricotta cheese with the remaining 1/2 cup of grated Parmesan. Dollop half of this ricotta mixture over the pasta and gently fold it in carefully—you don’t want to fully mix it, just fold so you get pockets of creamy cheese throughout.
- Add Remaining Ricotta and Toppings: Dollop the remaining ricotta mixture on top in small spoonfuls. Sprinkle the remaining 2 cups of shredded mozzarella cheese evenly over the top.
- Bake: Transfer the skillet (or if not oven-safe, carefully transfer contents to a baking dish) to the oven and bake for 30 to 35 minutes, until the edges are bubbly, and the top has golden brown spots.
