  • 1/4 teaspoon cayenne pepper (optional)
  • 6 cups water

  • 1 green bell pepper, chopped
  • 2 ribs celery, chopped
  • 5 cloves garlic, minced

Rice and Garnish

  • 2 cups long-grain white rice
  • Chopped fresh parsley or green onions (for optional garnish)

Instructions

  1. Soak Beans: Rinse the red kidney beans under cold running water. Soak them in a large bowl covered with water by at least 2 inches overnight. Alternatively, use the quick-soak method by pouring boiling water over the beans and letting them sit for 2 hours. After soaking, drain and rinse the beans thoroughly.
  2. Sauté Vegetables and Sausage: Heat olive oil in a large, heavy pot over medium heat. Add the sliced andouille sausage and cook until lightly browned, about 5-7 minutes. Remove the sausage and set aside. In the same pot, add chopped onion, green bell pepper, celery, and minced garlic. Sauté for about 5 minutes until the vegetables soften and become fragrant.
  3. Simmer Beans: Add the soaked beans, bay leaf, dried thyme, dried oregano, cayenne pepper (if using), and 6 cups of water to the pot. Bring the mixture to a boil, then reduce heat to low, cover, and simmer gently for 2 to 2 ½ hours until beans are tender. Return the browned sausage to the pot during the last 30 minutes of cooking to allow flavors to meld.
  4. Prepare Rice: While the beans simmer, cook the long-grain white rice according to package instructions, typically bringing 4 cups water to a boil, adding rice, reducing heat to low, covering, and cooking for about 18 minutes until fluffy.
  5. Finish and Serve: For a thicker stew, mash some of the beans gently against the side of the pot and stir them back in. Remove the bay leaf, season the beans with salt to taste, and give it a good stir. Serve a generous scoop of the red beans over the cooked white rice, garnished optionally with chopped fresh parsley or green onions.
