Ritz Peanut Butter Chocolate Sandwiches are a delightful treat combining crunchy Ritz crackers, creamy peanut butter, and rich milk and white chocolate coatings. These no-bake sandwiches are easy to prepare and perfect for a quick snack or party dessert, offering a satisfying mix of sweet and salty flavors.

Ingredients

Scale

Sandwiches

  • 48 Ritz crackers
  • ¾ cup creamy peanut butter

Chocolate Coating

  • 8 oz milk chocolate melting wafers
  • 8 oz white chocolate melting wafers
  • 2 tsp coconut oil (divided – 1 tsp per chocolate)

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper and set it aside to keep the sandwiches from sticking during chocolate coating.
  2. Assemble Sandwiches: Spread about 1 teaspoon of creamy peanut butter onto the flat side of one Ritz cracker, then top it with another cracker to form a sandwich. Repeat this process until all crackers are paired.
  3. Freeze for Firmness: Place the assembled sandwiches in the freezer for 10 to 15 minutes to allow the peanut butter to firm up, making dipping easier.
  4. Melt Chocolate: Using two separate microwave-safe bowls, melt the milk chocolate wafers together with 1 teaspoon of coconut oil, and in another bowl melt the white chocolate wafers with the remaining teaspoon of coconut oil. Heat in 30-second intervals, stirring between each until the chocolates are smooth and fully melted.
  5. Dip Sandwiches: Dip each peanut butter sandwich into the melted chocolate of your choice, coating it thoroughly. Tap off any excess chocolate to avoid drips.
  6. Add Toppings: Place the dipped sandwiches back onto the parchment-lined baking sheet. Before the chocolate hardens, garnish with sprinkles or your favorite toppings if desired.
  7. Chill to Set: Refrigerate the sandwiches for 15 to 20 minutes or until the chocolate coating is fully set and firm.

Notes

  • Milk and white chocolate melting wafers are preferred for smooth dipping; regular chocolate chips may require additional coconut oil to melt properly.
  • You can top sandwiches with sprinkles, crushed nuts, or sea salt for added texture and flavor.
  • Store finished sandwiches in an airtight container in the refrigerator to maintain freshness and texture.
  • Allow sandwiches to come to room temperature a few minutes before serving for best flavor.
