Ingredients

Scale

Broccoli and Roasting

  • pounds broccoli (about 2 medium heads), cut into 1-inch florets
  • 4 tablespoons extra-virgin olive oil
  • 2 teaspoons soy sauce
  • Salt and black pepper, to taste
  • 1 garlic clove, thinly sliced

Chile Crisp Crunch Topping

  • ½ cup coarsely chopped cashews
  • 1 tablespoon chile crisp, plus more for serving if desired
  • ⅓ cup panko bread crumbs

Whipped Tofu

  • 14 ounces drained silken tofu
  • 1 cup cashew butter
  • 6 tablespoons water

Instructions

  1. Preheat Oven and Prepare Broccoli: Heat the oven to 400°F (200°C) and line a large baking sheet with aluminum foil. Place the broccoli florets on the baking sheet, drizzle with 3 tablespoons of olive oil and the soy sauce. Season lightly with salt and black pepper and toss to coat evenly. Arrange broccoli in a single even layer, then dot the top with thinly sliced garlic.
  2. Roast Broccoli: Tightly wrap the broccoli mixture with another piece of aluminum foil, sealing it well to lock in moisture. Bake in the preheated oven until the broccoli is crisp-tender, about 15 minutes.
  3. Prepare Chile Crisp Bread Crumbs: While broccoli bakes, heat the remaining 1 tablespoon olive oil in a medium skillet over medium heat. Add the coarsely chopped cashews, season with salt and black pepper, and cook while stirring frequently until they become fragrant, about 3 minutes.
  4. Toast Panko and Combine Toppings: Stir the chile crisp into the cashews, then add the panko bread crumbs. Continue cooking and stirring until the panko is golden and toasted, about 2 to 3 minutes. Season to taste and transfer the mixture to a paper towel-lined plate to cool slightly.
  5. Make Whipped Tofu: In a small food processor, combine the drained silken tofu, cashew butter, and 6 tablespoons water. Blend until smooth and fluffy. Season generously with salt and black pepper to taste.
  6. Assemble the Dish: Spread the whipped tofu mixture evenly on a serving platter or shallow bowl. Arrange the roasted broccoli on top, drizzle with additional chile crisp if desired, and sprinkle generously with the chile crisp bread crumb and cashew topping.
  7. Serve: Serve immediately, with any extra chile crisp crunch on the side to add more texture and spice to each bite.

Notes

  • You can substitute panko bread crumbs with gluten-free bread crumbs to make this dish fully gluten-free.
  • For a nut-free version, replace cashews with toasted pumpkin seeds and use a nut-free butter alternative.
  • This dish can be served warm or at room temperature and works great as a vegan main or a hearty side.
  • Adjust the amount of chile crisp according to your preferred spice level.
  • Ensure to drain the silken tofu well to avoid excess liquid in the whipped tofu mixture.
