Ingredients

Scale

Salad Ingredients

  • 4 cups sauerkraut (well drained)
  • 1 small sweet onion, finely chopped
  • 1 large stalk celery, chopped
  • 1 green bell pepper, chopped
  • 1 large carrot, shredded
  • 1 apple, diced

Dressing Ingredients

  • 2/3 cup white sugar
  • 1/3 cup vegetable oil
  • 1/3 cup apple cider vinegar
  • Kosher salt, to taste
  • 1/2 teaspoon black pepper

Instructions

  1. Drain and Combine Vegetables: Drain the sauerkraut thoroughly to remove excess liquid. In a large bowl, mix together the drained sauerkraut, finely chopped sweet onion, chopped celery, green bell pepper, shredded carrot, and diced apple, ensuring an even distribution of ingredients.
  2. Prepare the Dressing: In a small saucepan over low heat, combine white sugar, vegetable oil, apple cider vinegar, kosher salt, and black pepper. Stir continuously until the sugar completely dissolves and the dressing is well blended. Remove from heat and allow the dressing to cool slightly.
  3. Mix and Marinate: Pour the slightly cooled dressing over the combined vegetables and fruit. Stir the mixture well to coat all ingredients thoroughly. Cover the bowl with a lid or plastic wrap and refrigerate for at least 6 hours to allow the flavors to meld and develop before serving.

Notes

  • Ensure the sauerkraut is well drained to prevent a watery salad.
  • Adjust sugar and salt levels to taste, depending on sweetness preference and sauerkraut saltiness.
  • For extra crunch, add chopped nuts such as walnuts or almonds.
  • This salad can be prepared a day ahead to enhance flavor development.
  • Serve chilled as a refreshing side dish or light appetizer.
