Ingredients

Scale

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tbsp unsalted sweet cream butter, melted

Filling

  • 1 qt strawberry ice cream
  • 8 oz pink lemonade concentrate, thawed
  • 8 oz Cool Whip, thawed

Whipped Cream Topping

  • 1 ½ cups heavy whipping cream
  • ¾ cup powdered sugar
  • 2 tsp pure vanilla extract
  • 2 tbsp lemon zest

Garnish

  • Lemon zest
  • Lemon wedges

Instructions

  1. Preheat and Prepare Crust: Preheat the oven to 350°F. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter until evenly moistened.
  2. Assemble Crust: Lightly spray the pie pan with baking spray. Press half of the graham cracker mixture firmly into the bottom of the pie dish and press the remaining mixture evenly along the sides to form the crust.
  3. Bake and Cool: Bake the crust in the preheated oven for 10 minutes. Remove from oven and allow it to cool completely at room temperature.
  4. Prepare Pie Filling: Take the strawberry ice cream out of the freezer and let it soften for about 20 minutes. In a large bowl, whisk together the thawed pink lemonade concentrate, softened strawberry ice cream, and Cool Whip until the mixture is smooth and fully combined.
  5. Fill and Freeze Pie: Pour the filling into the cooled crust, spreading it evenly. Cover the pie and place it in the freezer to set overnight to solidify.
  6. Chill Mixing Bowl: Place a large mixing bowl into the freezer for 10 minutes to chill, prepping for the whipped cream.
  7. Prepare Whipped Cream: In the chilled bowl, add heavy whipping cream, powdered sugar, vanilla extract, and lemon zest. Using a hand mixer, beat the mixture at medium-high speed until stiff peaks form, about 10 minutes.
  8. Decorate Pie: Spread half of the whipped cream evenly over the frozen pie filling. Transfer the remaining whipped cream into a piping bag and pipe decorative dollops around the edge of the pie. Garnish with additional lemon zest and lemon wedges for a fresh look.
  9. Final Freeze: Place the decorated pie back into the freezer and let it freeze for an additional 2 hours to set the topping.
  10. Serve: Remove the pie from the freezer, slice, and serve chilled. Enjoy this cool, creamy, and zesty dessert!

Notes

  • Allow the strawberry ice cream to soften properly to ensure smooth filling texture.
  • Make sure the crust is completely cooled before adding the filling to prevent melting.
  • You can substitute Cool Whip with homemade whipped cream if preferred.
  • For best results, use freshly grated lemon zest to maximize flavor and aroma.
  • The pie needs to be frozen overnight plus additional freezing after decorating to maintain structure and texture.
  • Use a piping bag with a star tip for decorative whipped cream dollops.
