Crab Rangoon
- 8 ounces (226g) fresh or pasteurized crabmeat, like blue crab or Dungeness crab
- 4 ounces (113g) cream cheese, softened
- 1 green onion, thinly sliced
- 2 tablespoons finely diced red bell pepper
- 1 small clove garlic, grated on a microplane or finely minced
- 1 teaspoon light soy sauce or tamari
- 26 wonton wrappers
- Peanut oil or vegetable oil for frying
Sweet and Sour Dipping Sauce
- 2 tablespoons Sambal Oelek chili paste (we use Huy Fong)
- 6 tablespoons (75g) granulated sugar
- 2 tablespoons unseasoned rice wine vinegar
- Prepare the crab: Place the crabmeat in a colander and let it drain for at least 5 minutes to remove excess moisture. Pick through the crabmeat carefully to remove any bits of shell for a smooth filling.
- Make the dipping sauce: Combine the Sambal Oelek chili paste, granulated sugar, and rice wine vinegar in a small saucepan over medium heat. Stir continuously until the sugar dissolves completely, about 30 seconds. Remove from heat, cover, and set aside to serve. Warm before serving if necessary.
- Make the filling: In a medium bowl, stir together the softened cream cheese, sliced green onion, diced red bell pepper, grated garlic, and soy sauce until well combined. Gently fold in the drained crabmeat, ensuring an even mixture without breaking up the crab too much.
- Make an egg wash: Whisk one egg with a tablespoon of water in a small bowl. This will be used to seal the wonton wrappers.

- Prepare the oil: Use a small, deep saucepan with 2 to 3 inches of peanut or vegetable oil. Heat the oil to 350°F (175°C), monitoring with an instant-read thermometer for accuracy. Make sure there is enough space to fry the wontons without the oil rising too close to the top.
- Fry the wontons: Carefully add 5 to 6 wontons to the hot oil. Maintain the oil temperature near 350°F (175°C) by adjusting the heat as necessary. Use a wire mesh spider or slotted spoon to turn the wontons occasionally for even browning.
- Drain and repeat: When the wontons are crisp and golden brown, use a spider or slotted spoon to transfer them onto a paper towel-lined baking sheet to drain excess oil. Repeat frying with the remaining wontons. If any wonton splits and causes oil splatter, use a splatter screen for safety.
