Dressing

  • 3 tbsp. extra-virgin olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Mellow the Onion: In a medium bowl, cover the thinly sliced red onion with ice water. Let it sit, stirring occasionally, for about 10 minutes to reduce the sharpness of the onion. After soaking, drain and pat the onion dry with paper towels.
  2. Prepare the Dressing and Marinate Tomatoes: In a large bowl, whisk together the red wine vinegar, honey, and Dijon mustard until smooth. While whisking constantly, slowly drizzle in the extra-virgin olive oil to create an emulsified dressing. Season with kosher salt and freshly ground black pepper to taste. Add the tomato wedges to the bowl and gently toss them to coat evenly in the dressing. Allow the tomatoes to marinate at room temperature for 5 minutes to absorb the flavors.
