Cake:
- 1 cup all-purpose flour (or 1:1 gluten-free flour)
- 1 ½ tsp baking powder
- ¼ tsp salt
- 5 large eggs
- ¾ cup sugar (divided)
- 1 tsp vanilla extract
- ⅓ cup whole milk
Milk Mixture:
- 12 oz evaporated milk
- 9 oz sweetened condensed milk
- ⅓ cup heavy whipping cream
Topping:
- 2 cups heavy whipping cream (for topping)
- Additional 2 tbsp sugar (for whipping cream, if desired)
- Optional: Fresh berries for garnish
- Preheat and prepare: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish thoroughly to prevent sticking.
- Mix dry ingredients: In a medium bowl, combine the all-purpose flour, baking powder, and salt; set this mixture aside.
- Beat eggs and sugar: In a large bowl, use an electric mixer to beat the eggs and ¾ cup of sugar together until the mixture is light, fluffy, and pale in color. Add the vanilla extract and mix to combine.
- Combine wet and dry: Gradually add the dry ingredients to the egg mixture in alternating additions with the whole milk, mixing until just combined without overmixing to keep the batter airy.
- Bake the cake: Pour the batter into the prepared baking dish and smooth the top. Bake for approximately 30 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and let cool completely.
- Prepare milk soak: In a separate bowl, whisk together evaporated milk, sweetened condensed milk, and ⅓ cup heavy whipping cream until fully blended.
- Soak the cake: Using a fork, pierce the cooled cake multiple times to allow better absorption. Slowly pour the milk mixture evenly over the entire cake, allowing it to soak in.
- Whip the topping: In a clean bowl, whip the remaining 2 cups heavy whipping cream with additional sugar (about 2 tbsp or to taste) until stiff peaks form.
- Top and chill: Spread the whipped cream evenly over the soaked cake. Optionally, garnish with fresh berries. Refrigerate the cake for at least two hours to fully absorb and chill before serving.
Notes
- Make sure the cake is completely cooled before adding the milk mixture to prevent it from becoming soggy.
- Use a fork or skewer to pierce the cake thoroughly so the milk soak penetrates evenly.
- For a lighter topping, you can fold in some mascarpone or cream cheese with the whipped cream.
- Store the cake refrigerated and consume within 3-4 days for optimal freshness.
- Fresh berries add a nice tart contrast but are optional depending on preference and season.
