Caramel Layer
- 11 ounces caramels (38 individually wrapped)
- 2 tablespoons heavy cream
Chocolate Topping

- Preheat and prepare pecans: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and spread the pecan halves evenly across it, then bake for 5 minutes. Remove from oven and let the pecans cool completely.
- Arrange pecans: Lightly spray 2 to 3 baking sheets with non-stick spray and line them with parchment, wax paper, or silicone baking liners. Group the cooled pecans into clusters of 3 to 4 halves each, spacing them 1 to 1½ inches apart on the prepared sheets.
- Melt caramel: Unwrap the individual caramels and place them in a medium-sized heat-safe bowl. Add the 2 tablespoons of heavy cream. Heat the mixture in 45-second intervals in the microwave, stirring thoroughly after each interval until the caramel is smooth and creamy.
- Add caramel to pecans: Immediately spoon about 1 to 1½ teaspoons of the melted caramel over the center of each pecan cluster, creating a sticky base for the chocolate layer.
- Melt chocolate: Place the chocolate chips in a microwave-safe plastic or silicone bowl. Heat in 30-second bursts, stirring well between each interval (first two times 30 seconds, then 15 seconds). Continue heating in shorter 10-second increments if needed, until most chips are melted but some remain whole to avoid overheating. Stir continuously for 30 seconds to 1 minute to ensure smooth chocolate.
- Add chocolate topping: Spoon 1 to 1½ teaspoons of melted chocolate over the caramel layer on each pecan cluster. Use the back of your spoon or the tip to create a decorative swirl on top of the chocolate.
- Optional garnish: If desired, sprinkle a dash of sea salt on top of each chocolate swirl for enhanced flavor contrast.
- Set and serve: Allow the turtle chocolates to sit at room temperature for at least 2 hours until they are fully set and firm. Once set, enjoy or store properly for later indulgence.
