Instructions

  1. Sauté Aromatics: In a large pot over medium heat, heat the sesame oil. Add the minced garlic and ginger, sauté for 2-3 minutes until fragrant.
  2. Whisk Broth: Pour in the vegetable broth, soy sauce, miso paste, rice vinegar, and chili paste (if using). Whisk thoroughly until the miso paste fully dissolves into the liquid.
  3. Simmer Broth: Bring the broth to a gentle simmer. Add sliced shiitake mushrooms and tofu cubes. Continue to simmer for 15 minutes, allowing flavors to meld and ingredients to soften.
  4. Cook Bok Choy: Add the halved baby bok choy to the simmering broth. Let it cook for another 5 minutes until the bok choy becomes tender but still vibrant.
  5. Cook Noodles: While the broth simmers, prepare the ramen noodles according to package instructions, usually by boiling in water until tender. Drain and set aside.
  6. Assemble Bowls: Divide the cooked noodles into serving bowls. Ladle the hot broth with tofu, mushrooms, and bok choy over the noodles. Garnish with sliced green onions and fresh cilantro if desired. Serve immediately.
