Instructions

  1. Preheat the Oven and Prepare Mushrooms: Preheat your oven to 375°F (190°C). Gently clean each mushroom with a damp cloth to remove any dirt. Carefully remove the stems, trim off any damaged parts, and finely chop them. Set the mushroom caps aside on a plate.
  2. Sauté Vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and chopped mushroom stems. Sauté these until they soften, approximately 5 minutes. Add the minced garlic and cook for an additional minute until fragrant. Remove the skillet from heat.
  3. Prepare the Filling: In a medium mixing bowl, combine the sautéed onion, mushroom stem, and garlic mixture with vegan breadcrumbs, vegan cream cheese, nutritional yeast, fresh parsley, dried thyme, salt, and pepper. Mix everything thoroughly until well incorporated.
  4. Stuff the Mushrooms: Spoon the prepared filling generously into each mushroom cap, pressing the stuffing slightly to hold.
  5. Bake the Stuffed Mushrooms: Arrange the stuffed mushroom caps on a lightly greased baking sheet. Place them in the preheated oven and bake for about 20 minutes or until the tops turn golden brown and the mushrooms have become tender.
