Cranberry Brie Bites are delightful mini appetizers featuring creamy Brie cheese, tangy whole berry cranberry sauce, and crunchy roasted pecans, all wrapped in flaky crescent dough and baked to golden perfection. Perfect for holiday gatherings or any festive occasion, these savory-sweet bites are easy to assemble and irresistibly delicious.

Ingredients

Scale

For the Bites

  • Cooking spray, as needed
  • All-purpose flour, for dusting
  • 1 tube crescent dough (approximately 8 oz)
  • 1 wheel of Brie (about 8 oz)
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup finely chopped roasted, unsalted pecans
  • 6 rosemary sprigs, cut into 1-inch pieces

Instructions

  1. Preheat and Prepare Muffin Tin: Arrange a rack in the center of your oven and preheat it to 375°F (190°C). Grease a mini 24-cup muffin tin thoroughly with cooking spray to prevent sticking.
  2. Prepare Crescent Dough: Lightly flour a clean surface and unroll the crescent dough. Pinch together the seams to form a solid sheet, then cut the dough into 24 equal squares. Press each square gently into the muffin tin cups, creating a dough-lined base for the filling.
  3. Add Filling: Cut the Brie cheese into small pieces and place one piece into each dough cup. Spoon a generous amount of whole berry cranberry sauce on top of the Brie. Sprinkle finely chopped roasted pecans over the cranberry sauce, then top each bite with a piece of rosemary for an aromatic touch.
  4. Bake: Place the muffin tin in the preheated oven and bake the bites until the pastry is golden brown and the Brie is melted, about 15 minutes. Remove from oven and let cool slightly before serving.

Notes

  • For easier cutting, chill the Brie slightly before slicing.
  • Use fresh rosemary sprigs for best flavor; adjust quantity to taste.
  • You can substitute pecans with walnuts or almonds if preferred.
  • These bites are best served warm to enjoy the gooey melted Brie.
  • Store any leftovers in an airtight container in the refrigerator and reheat gently before serving.
