Instructions

  1. Prepare the pan: Lightly coat a 9×13-inch baking dish with cooking spray and line it with parchment paper leaving a 2-inch overhang on the long sides for easy removal of the fudge.
  2. Melt the chocolate: Place the chocolate chips in a heatproof bowl and microwave on high, stirring every 30 seconds until fully melted and smooth.
  3. Cook butter, milk, and fluff: In a medium saucepan over medium-high heat, combine butter, evaporated milk, and marshmallow fluff. Attach a candy thermometer to the pan and cook, stirring occasionally, until the butter and fluff melt into a smooth homogeneous mixture.
  4. Add sugar and cook to soft ball stage: Stir in the sugar and bring the mixture to a gentle boil, stirring constantly to prevent scorching. Continue cooking until the candy thermometer reads 234ºF (soft ball stage). If no thermometer is available, cook for about 4 to 5 minutes until the mixture is slightly golden and smells like caramel.
  5. Combine melted chocolate and mix-ins: Remove the pan from heat. Immediately fold the melted chocolate into the hot sugar mixture until evenly incorporated. Then fold in 1 cup of the prepared mix-ins like nuts or toffee bits.
  6. Set the fudge: Pour the fudge mixture into the prepared baking dish and sprinkle the remaining 1/2 cup of mix-ins evenly over the top. Allow the fudge to cool completely at room temperature until firm.
  7. Cut and store: Once cooled and set, use the parchment paper overhang to lift the fudge out of the pan. Cut into squares and store tightly wrapped at room temperature for up to 14 days.
