Instructions

  1. Combine ingredients: Place the quartered figs into a medium saucepan. Add the granulated sugar, lemon juice, and vanilla extract if using. Let the mixture sit for about 10 minutes to allow the figs to release their natural juices.
  2. Simmer the jam: Set the saucepan over medium heat. Stir frequently until the sugar completely dissolves, then add the water. Bring the mixture to a gentle simmer and continue cooking for 20 to 30 minutes, stirring occasionally. Cook until the jam thickens and the figs become very soft.
  3. Jar the jam: Stir in a pinch of kosher salt, then remove the saucepan from heat. Carefully spoon the warm jam into sterilized jars. Allow the jars to cool to room temperature before sealing and refrigerating the jam for storage.
