Ingredients

Scale

Egg Mixture

  • 12 large eggs
  • 3 tablespoons milk
  • 3/4 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Sandwich Assembly

  • 12 English muffins (split)
  • 12 slices cooked turkey sausage patties (or lean Canadian bacon)
  • 12 slices cheddar cheese

Instructions

  1. Preheat oven: Preheat your oven to 325°F (163°C) and grease a 9×13 inch baking dish to prepare it for the egg mixture.
  2. Whisk eggs: In a large bowl, combine the 12 eggs, 3 tablespoons milk, 3/4 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder. Whisk until the mixture is smooth and well blended.
  3. Bake eggs: Pour the egg mixture into the greased baking dish and bake for approximately 20 minutes or until the center is firm and fully cooked. Remove from the oven and allow it to cool completely before proceeding.
  4. Cut eggs: Once cooled, cut the baked egg casserole into 12 equal square portions to fit your English muffins.
  5. Toast English muffins: Lightly toast the split English muffins to give them a slight crunch and warmth which will hold up to the fillings.
  6. Assemble sandwiches: On the bottom half of each toasted muffin, layer one egg square, one slice of cooked turkey sausage patty (or lean Canadian bacon), and one slice of cheddar cheese. Top each sandwich with the muffin’s other half.
  7. Warm or freeze: If serving immediately, place the assembled sandwiches in a 350°F (177°C) oven for about 5 minutes until the cheese melts and the sandwich is warmed through. For storage, allow the sandwiches to cool completely, then wrap each individually in plastic wrap or foil and freeze. Reheat sandwiches directly from frozen as needed.

Notes

  • You can substitute turkey sausage with lean Canadian bacon or your preferred breakfast meat for variation.
  • If you plan to freeze the sandwiches, make sure they are completely cooled before wrapping to avoid sogginess.
  • To reheat frozen sandwiches, unwrap them and microwave on medium power for 1-2 minutes or bake in a 350°F oven until heated through.
  • Adjust seasoning in the egg mixture to taste if desired.
  • These sandwiches can be stored in the freezer for up to 1 month for best quality.
