  • 1 lb. red raisin grapes (about 3 1/2 cups)
  • 2 tablespoons (or more) light agave syrup
  • 1/8 teaspoon fresh lemon juice
  • 1/3 cup (100% juice) concord grape concentrate, thawed

Instructions

  1. Step 1: Wash and rinse grapes, then remove stems. Divide grapes between two parchment-lined baking sheets—one for green grapes and one for red grapes—that fit in your freezer. Freeze grapes for at least 6 hours or preferably overnight.
  2. Step 2: Transfer the frozen green grapes to a food processor, keeping the red grapes frozen. Add agave syrup and 1/4 cup water. Pulse for about 30 seconds until fairly smooth. Scrape down the sides, taste, and add more agave if desired. Add lemon juice and pulse for about 30 seconds more until smooth. Transfer this to a medium bowl.
  3. Step 3: Clean the food processor bowl, then pulse the frozen red grapes with the thawed concord grape concentrate until mostly smooth, about 30 seconds. Scrape down the sides and pulse another 30 seconds until fully smooth.
  4. Step 4: Serve the sorbet immediately for a soft-serve texture, or for a firmer, traditional consistency, divide the sorbet between two freezer-safe containers and freeze for at least 3 more hours before scooping.
  5. Step 5: To make ahead, store sorbet in the freezer for up to 30 days. Keep it well covered until ready to serve.
