Instructions

  1. Whip Cream Mixture: In the large bowl of a stand mixer fitted with the whisk attachment, or using a handheld mixer in a large bowl, beat the heavy cream, confectioners’ sugar, and kosher salt on medium-high speed until soft peaks form, about 2 to 3 minutes. Then add the Greek yogurt, mascarpone, and vanilla extract. Continue to beat on low speed until everything is incorporated and stiff peaks form, about 1 more minute.
  2. Assemble Layers: Divide approximately a heaping 1/4 cup of the cream mixture among the four mason jars as the first layer. In a tall vessel, combine the brewed espresso and rum extract. Break the ladyfingers in half. Dunk three pieces of ladyfinger halves into the espresso mixture briefly to soak, then layer them on top of the cream mixture in each jar. Repeat layering the cream mixture and espresso-soaked ladyfingers three more times, ending with a final layer of cream. Each jar should have four layers of cream and three layers of ladyfingers.
  3. Chill and Serve: Serve the tiramisu trifles immediately, or refrigerate them for at least 8 hours and up to 12 hours to allow the flavors to meld and the ladyfingers to soften perfectly. Just before serving, dust the tops with unsweetened cocoa powder for a classic finishing touch.
