Instructions

  1. Combine Dry Ingredients: In a food processor, pulse together the powdered monk fruit sweetener, cocoa powder, and sea salt until the mixture is uniform and well combined.
  2. Add Wet Ingredients: Add the ChocZero Keto Cookie Butter Spread and vanilla extract to the food processor. Process until the mixture is smooth and slightly glossy, scraping down the sides and bottom as needed to incorporate all dry ingredients. Adjust sweetness to taste if desired. The dough should be dense but stick together when pressed; add more cookie butter if it seems too powdery or crumbly.
  3. Fold in Almonds: Pulse in the chopped almonds briefly until just combined to maintain crunch. If the almonds are unevenly distributed, remove the blade and gently stir with a spatula.
  4. Shape Cookies: Line a cookie sheet with parchment paper. Use a cookie scoop to portion the dough, pressing it firmly into the scoop before releasing onto the sheet. Use a spoon to flatten each cookie to your preferred thickness. If using, press sugar-free dark chocolate chips into the tops.
