  • 3 Tbsp. mayonnaise
  • 6 oz. whole milk mozzarella, shredded, divided

Instructions

  1. Prepare the skillet and aromatics: Place a rack in the top third of your oven and turn on the broiler to preheat. In an 8-inch cast-iron skillet or any ovenproof skillet, melt the butter over medium heat. Add the finely chopped garlic and half of the sliced scallions, stirring frequently until fragrant, about 1 minute. Season with kosher salt to taste.
  2. Cook the corn mixture: Add the thawed corn and granulated sugar to the skillet. Stir and cook the corn until it softens, which should take about 1 to 2 minutes over medium heat.
  3. Add mayonnaise and cheese: Remove the skillet from heat. Fold in the mayonnaise and half (3 ounces) of the shredded mozzarella cheese, stirring gently until the cheese melts and combines with the mixture evenly.
  4. Broil the cheesy corn: Sprinkle the remaining 3 ounces of mozzarella cheese evenly over the top of the corn mixture. Place the skillet under the preheated broiler and broil closely watching for about 4 to 6 minutes, or until the top is golden brown and bubbly.
  5. Finish and serve: Remove from the oven and sprinkle the remaining sliced scallions on top. Serve immediately as a warm, cheesy side dish.
