  • 1 oz. Parmesan, finely grated (about 1/2 cup), plus more for sprinkling

Pizza

  • 16 oz. store-bought or homemade pizza dough
  • 2 oz. mozzarella, shredded
  • 4 oz. rotisserie chicken, shredded

Garnish

  • 1 oz. sun-dried tomatoes sliced into bite-sized pieces (reserved from total 5 oz.)
  • Additional fresh basil for serving
  • Additional grated Parmesan for sprinkling

Instructions

  1. Preheat Oven and Prepare Tomatoes: Arrange an oven rack in the lower third position and preheat your oven to 550°F. Finely chop 4 oz. of the sun-dried tomatoes. Slice the remaining 1 oz. into bite-sized pieces and set aside for topping the pizza after baking.
  2. Cook Sun-Dried Tomatoes and Garlic: Heat the olive oil in a large skillet over medium heat. Add the chopped sun-dried tomatoes and minced garlic. Stir continuously just until the garlic softens and the tomatoes begin to break down, about 3 minutes. Season with 1/2 teaspoon of kosher salt.
  3. Make the Cream Sauce: Add the heavy cream, chopped basil, chopped thyme, and crushed red pepper flakes to the tomato mixture. Bring to a simmer, then reduce heat to medium-low to prevent boiling. Cook for 5 to 6 minutes, stirring occasionally, until the sauce has reduced and thickened enough to coat the back of a spoon. Remove from heat and stir in the grated Parmesan until the sauce is smooth. Allow the sauce to cool slightly.
  4. Prepare the Pizza Base: Stretch the pizza dough into a round approximately 12 to 14 inches in diameter. Place the dough onto a round pizza pan or a large baking sheet. Spread the cooled tomato cream sauce evenly over the dough, leaving a 1/2 to 1 inch border around the edges.
  5. Add Toppings: Sprinkle the shredded mozzarella evenly over the sauce-covered dough. Then evenly distribute the shredded rotisserie chicken on top of the cheese layer.
  6. Bake the Pizza: Place the pizza in the preheated oven and bake for about 5 minutes, or until the bottom and edges of the crust turn golden brown and crispy.
  7. Garnish and Serve: Remove the pizza from the oven. Top with the reserved sliced sun-dried tomatoes, additional fresh basil leaves, and a sprinkle of Parmesan cheese. Slice and serve immediately.
