Crust
- 1 graham cracker pie crust
Filling
- 14 oz can sweetened condensed milk
- Zest and juice of 1 lime (about 2 ½ tablespoons)
- 15 oz can crushed pineapple, drained well
- 2/3 cup chopped Maraschino cherries
- 2 tablespoons maraschino cherry juice
- 1 cup sweetened shredded coconut flakes
- ½ cup chopped pecans
- 4 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract
Topping
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- Maraschino cherries for garnish
- Mix Cream Cheese and Cream: Beat the softened cream cheese until smooth and creamy. Add 1 cup of heavy whipping cream along with the coconut and vanilla extracts. Beat the mixture on medium-high speed until medium to stiff peaks form, being careful not to overmix to maintain a light texture.
- Prepare Millionaire Pie Filling: In a separate large bowl, combine the sweetened condensed milk with the lime zest and lime juice; mix thoroughly. Stir in the well-drained crushed pineapple, chopped Maraschino cherries, maraschino cherry juice, shredded coconut flakes, and chopped pecans. Carefully fold in the whipped cream and cream cheese mixture until fully incorporated and smooth.
- Assemble the Pie: Pour and spread the prepared filling evenly into the graham cracker pie crust. Smooth the top with a spatula to create an even layer.
- Refrigerate: Place the pie in the refrigerator and chill for several hours, preferably at least 4 hours, to allow the filling to set properly and flavors to meld.
- Prepare and Add Topping: In a clean bowl, whip 1 cup heavy whipping cream with ¼ cup powdered sugar until stiff peaks form. Either pipe or evenly spread the whipped topping over the chilled pie. Garnish the pie with additional Maraschino cherries as desired for a decorative finish.
Notes
- Ensure the crushed pineapple is drained very well to avoid a watery filling.
- Do not overwhip the cream and cream cheese mixture to prevent it from becoming too stiff and losing its light texture.
- Refrigerate the pie for at least 4 hours or overnight for best flavor and firmness.
- You can substitute the graham cracker crust with a homemade or store-bought alternative as preferred.
- This pie is best served chilled and should be stored covered in the refrigerator.
