Cookie Dough
- 1 cup salted sweet cream butter, softened
- ½ cup + 2 tablespoons granulated sugar
- 1¼ teaspoons vanilla extract
- 2 cups all-purpose flour
Filling and Coating
- 32 Hershey Kisses, unwrapped
- 2 cups powdered sugar (or more if needed)
- Beat the Butter: Using a stand mixer or a medium bowl with a handheld mixer at medium-high speed, beat the softened butter for 1 minute until creamy.
- Add Sugar and Vanilla: Mix in the granulated sugar and vanilla extract, continuing to beat for another 1 minute until well combined.
- Mix in Flour: Add the all-purpose flour and mix on low speed for 30 seconds to 1 minute until the dry ingredients are just combined. Then, cover the dough and chill it in the refrigerator for 30 minutes to firm up.
- Preheat Oven: Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper to prevent sticking.
- Scoop Dough: Using a 1 tablespoon cookie scoop, scoop out the dough. For best results, use a heaping scoop to have enough dough to fully enclose each Kiss.
- Form Dough Balls: Roll each scoop of dough into a ball with your hands.
- Flatten Dough: Flatten each dough ball enough to fit around one unwrapped Hershey Kiss.
- Insert Chocolate: Place a Hershey Kiss in the center of the flattened dough and carefully wrap the dough around the chocolate, sealing it completely.
- Arrange Cookies: Place the shaped dough balls on the prepared baking sheets about 2 inches apart to allow for spreading during baking.
- Bake: Bake in the preheated oven for 10 to 12 minutes until edges are lightly golden.
- Cool on Sheet: Allow the cookies to cool on the baking sheet for 8 to 10 minutes so they set up slightly before handling.
- Coat in Powdered Sugar: Roll the warm cookies in powdered sugar until completely coated. Return them to the baking sheet and let them cool fully to set the coating.
Notes
- Ensure the butter is softened at room temperature for easier mixing and a better texture.
- Do not unwrap the Hershey Kisses until ready to use to avoid melting or sticking.
- Chilling the dough helps to make the cookies less spread and easier to work with.
- You can add more powdered sugar if needed to fully coat the cookies.
- Store cookies in an airtight container at room temperature for up to 5 days.
