Vegetable and Sauce Mixture

  • 1 tbsp. extra-virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 1 medium carrot, peeled, finely chopped
  • 1 red bell pepper, seeds and ribs removed, finely chopped
  • 1/2 cup ketchup
  • 2 garlic cloves, finely chopped
  • 1 tbsp. chili powder
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. yellow mustard
  • 1 tbsp. Worcestershire sauce

Meat and Eggs

  • 1 lb. ground breakfast sausage or ground turkey
  • 1 (14.5-oz.) can crushed tomatoes
  • Kosher salt, to taste
  • 4 large eggs

Toppings and Serving

  • Shredded Parmesan cheese, for serving
  • Freshly ground black pepper, to taste
  • 4 large slices of toast (optional)

Instructions

  1. Preheat and sauté vegetables: Arrange a rack in the center of the oven and preheat the oven to 400ºF. In a large ovenproof skillet or pot over medium-high heat, warm the olive oil. Add the finely chopped onion, carrot, and red bell pepper. Cook, stirring occasionally, until the vegetables soften and develop a golden color, about 10 to 12 minutes.
  2. Add sauce ingredients: Reduce the heat to medium. Stir in the ketchup and cook, stirring occasionally, until the ketchup darkens in color, approximately 5 to 7 minutes. Mix in the garlic and chili powder, cooking until fragrant, about 1 minute. Then add the apple cider vinegar, yellow mustard, and Worcestershire sauce, stirring to combine and warming through for about 1 more minute. Transfer this vegetable and sauce mixture to a medium bowl temporarily and set aside.
  3. Brown the sausage: Increase heat back to medium-high and add the ground breakfast sausage or turkey to the skillet. Cook, stirring frequently and breaking apart the meat to ensure even browning, for 5 to 7 minutes until fully browned.
  4. Combine and simmer: Add the crushed tomatoes, 1/2 teaspoon kosher salt, and the reserved vegetable mixture back into the skillet with the cooked sausage. Bring the mixture to a boil, then reduce the heat to low and let it simmer until the sauce slightly thickens and reduces, about 2 to 3 minutes. Remove from heat once ready.
  5. Create wells and add eggs: Make four indentations in the meat and vegetable mixture using the back of a spoon. Crack one egg into each depression, then season the eggs with kosher salt to taste.
  6. Bake the eggs: Place the skillet in the preheated oven and bake until the egg whites are set and the yolks are slightly runny, approximately 8 to 10 minutes. You can gently shake the pan to test if the eggs are set.
  7. Finish and serve: Remove the skillet from the oven. Sprinkle the top with shredded Parmesan cheese and freshly ground black pepper. Serve immediately, optionally alongside toasted bread slices.
