Ingredients

Scale

Base Ingredients

  • 2/3 cup uncooked quinoa (rinsed)
  • 2 teaspoons fresh ginger (minced)
  • 1 teaspoon ground turmeric
  • 1 teaspoon sea salt
  • Pinch of pepper
  • 4 cups turmeric golden milk

Vegetables

  • 1/2 cup onion (roughly chopped)
  • 1 large carrot (thinly sliced)
  • 1 large red bell pepper (thinly sliced)
  • 3 cups broccoli (roughly chopped)
  • 3 cups spinach (tightly packed)
  • 1 cup snow peas

Garnish

  • Cilantro (for garnish)

Instructions

  1. Combine quinoa and spices: In the bottom of a 7-quart slow cooker, stir together the rinsed quinoa, minced fresh ginger, ground turmeric, sea salt, and a pinch of pepper until evenly mixed.
  2. Add liquids and initial vegetables: Pour in the 4 cups of turmeric golden milk and stir to combine. Then add the roughly chopped onion, thinly sliced carrot, and red bell pepper to the slow cooker.
  3. Cook the quinoa base: Cover the slow cooker with its lid and set it to cook on low heat. Let the quinoa absorb the golden milk and cook until it is fluffy and tender, which should take about 3 hours.
  4. Add remaining vegetables: Once the quinoa is cooked through, add the roughly chopped broccoli, tightly packed spinach, and snow peas to the slow cooker. Stir gently to combine.
  5. Continue cooking until vegetables are tender: Cover the slow cooker again and cook on low for an additional 30 to 45 minutes, or until the added vegetables are tender but still vibrant and fresh.
  6. Garnish and serve: Finish the dish by garnishing with fresh cilantro for an added burst of flavor. Serve warm and enjoy your wholesome and comforting turmeric vegetable quinoa.

Notes

  • To enhance the flavor, use fresh turmeric golden milk or make your own by simmering milk with turmeric, ginger, and spices.
  • You can substitute the vegetables based on seasonal availability or preference, such as using kale instead of spinach.
  • This recipe is gluten-free and vegetarian by default.
  • Make sure to rinse quinoa thoroughly to remove its natural bitterness.
  • If you prefer a firmer vegetable texture, add broccoli, spinach, and snow peas later and reduce cooking time accordingly.
